Description

A classic Latin dessert made gluten-free! This Gluten-Free Tres Leches Cake is fluffy, perfectly soaked in three milks, and topped with whipped cream and fresh strawberries. It’s a celebration treat for any occasion.


Ingredients

1 cup all-purpose gluten-free flour (like Pillsbury)

1/4 teaspoon xanthan gum (omit if included in flour)

1 1/2 teaspoons gluten-free baking powder

1/4 teaspoon salt

5 large eggs, separated

1 cup sugar, divided

1/3 cup whole milk

1 teaspoon pure vanilla extract

1 (12-oz) can evaporated milk

1 (14-oz) can sweetened condensed milk

1/4 cup whole milk

Ground cinnamon, for topping

Fresh strawberries, for garnish (optional)

Whipped Cream Topping:

2 cups heavy whipping cream

1/4 cup powdered sugar

1/2 teaspoon pure vanilla extract


Instructions

1. Preheat oven to 350°F.

2. In a large bowl, whisk together gluten-free flour, baking powder, and salt.

3. Separate eggs into whites and yolks.

4. Beat 3/4 cup sugar and yolks on high speed until pale yellow.

5. Stir in 1/3 cup milk and vanilla.

6. Gently fold yolk mixture into the dry ingredients.

7. Beat egg whites, gradually adding remaining 1/4 cup sugar, until stiff peaks form.

8. Carefully fold beaten egg whites into the batter.

9. Pour batter into a greased 9×13 pan and smooth the top.

10. Bake 35–40 minutes or until a toothpick inserted in the center comes out clean.

11. Let the cake cool completely.

12. In a bowl, whisk together evaporated milk, sweetened condensed milk, and 1/4 cup milk.

13. Poke holes all over the cooled cake with a fork.

14. Slowly pour the milk mixture over the cake, making sure to saturate evenly.

15. Refrigerate at least 1 hour, preferably overnight.

16. To make whipped cream: beat cream, powdered sugar, and vanilla until stiff peaks form.

17. Spread whipped cream over cake. Sprinkle with cinnamon and top with strawberries to serve.


Notes

Room-temperature eggs work best for the fluffiest texture.

Chill the cake overnight for maximum moisture and flavor.
