As many people plan to celebrate Cinco De Mayo whether it be in a small celebration by having some yummy dishes for you and your family to enjoy or a large party where you will find all kinds of food to feast on with many guest present, it all falls under what you prefer.
For our family we really don’t do much we acknowledge the date and may have some fun foods to go with the celebration, but nothing elaborate. This year my husband and son will be doing a 30 hour famine to bring awareness to the starvation that is happening today in our world.
So many young children lose their lives everyday because of this. And in our own country there are many children that go to bed without supper or even go days without.

Last night at about 11:00 p.m. yes, kinda late I know, I told my husband that I would make Black bean salsa for him to take to work and forgot so there I was in the kitchen at 11:00 p.m. making Black bean Salsa for Mark to take into work for their celebration it really doesn’t take long at all and it made for a happy husband. What have you made today?
Here are some of the simple recipes that may be fun for you and your family to make. And if you feel like sharing with your neighbors I am sure they would always appreciate a special gift.
Gluten Free Taco Salad
2 lb. of lean hamburger or Turkey burger
1 or 2 packets of GF Taco seasoning McCormick is usually safe but always check the ingredients
Pan fry hamburger with seasoning packet (follow directions)
1 head of lettuce cut into bite size pieces
1 medium Vidalia onion cut up into small pieces
1 large Tomato cut into small pieces
1 package of low fat Cabot cheese of your liking I use Cheddar
Guacamole (if you like, I use the store bought kind)
Low Fat sour cream
I use the black bean salsa (see recipe on this page) with this or you can use store bought
GF Taco sauce Ortega is what we use
GF Tortilla scoops
The kids love this one, enjoy!!
There is also gluten free humus so simple to make and very yummy!
Gluten Free Garlic Hummus
1 50 oz.can of Great Northern white beans, strained and rinsed ( I use Hanover brand)
3 cloves of garlic
3/4 cup of virgin olive oil
1 tsp. salt
In a blender put the white beans after rinsing them in a strainer
add the garlic, salt and olive oil
Set blender on low pulse and mix till creamy, it may take a bit more oil depending on the beans.
This is a super fast and yummy recipe, great for when guest are stopping by to visit or when it’s movie night at your house with family. Serve with a side of corn tortilla chips or Frito’s are gluten free as well, Yummy!
