This post is just another easy snack one. Again prompted from a conversation I had with a friend of mine that is new to gluten free living. She asked me a question about making easy snacks for on the go, muddy buddies came to mind or as another friend used to call it “dog chow!”
This is a snack that you can just bag up and send with your child when they are out and about with friends or family.
I don’t know about you, but there are still family members in my family that don’t know much about eating gluten free. They are learning but still have a lot of questions, so sending food along is always something I do it helps inform them and makes it easier as well.
So I thought this would be a good snack to post for anyone to make. It’s very easy, has protein and grains to it and of course it is very yummy.
Gluten Free Muddy Buddies
Ingredients
3 cups of Corn Chex
3 cups of Rice Chex
3 cups of Chocolate Chex
1 cup of semisweet chocolate chips
1/2 cup of Creamy Peanut butter
1/4 cup butter
1 Tsp. of vanilla
1 1/2 cups of confectioner sugar
*You can add 1 cup of Planters peanuts for some added crunch
Directions
You will need a large bowl to mix above ingredients
Mix all 9 cups of Chex cereal mix well and set aside
In a large microwavable bowl mix the semisweet chocolate chips, peanut butter and butter heat in a microwave 1-2 minutes till all is melted well. Remove from microwave and stir in vanilla.
Pour over cereal mixture and mix well place into a large resealable Ziploc bag add confectioner sugar close bag and toss to mix together.
Place into an airtight container and keep in refrigerator.
