With Christmas getting closer I just love the thought of getting into the kitchen more and making some great snacks for when the whole family is under one roof and also making goodies to give away as gifts.
One treat that comes to mind is peppermint bark. I love the mixture of candy canes, white chocolate and milk chocolate mmm…I have to say I just love peppermint anytime of the year!
What you will need is:
Some good peppermint sticks crushed up about 1 cup
2 lbs of white chocolate
2 lbs. of milk chocolate (if your doing a bottom layer of milk chocolate with white chocolate on top)
1 tsp. of peppermint flavoring-
All flavorings and extracts from McCormick are gluten free, just made that call today 12/7/2012 they also told me that within the last 8-12 months they have begun labeling their boxes gluten free I’m not sure exactly where it is on the box, but I’m going to check for it…makes life so much easier doesn’t it? Checked it’s right on the side of the box, yippee!
Next,put your peppermint sticks into a Ziploc bag seal it shut and gently hit them with a rolling pin just to crush them into the size that you would like. I like mine to be all different, I like to see the candy pieces
Next melt your white chocolate over a double boiler just till it becomes smooth and creamy.
Remove from heat and mix the peppermint flavoring in
Next mix the crushed peppermint sticks in
Spread mixture onto a cookie sheet lined with parchment paper for just white chocolate recipe or you could make it with a milk chocolate first layer (just melt the milk chocolate and spread down for a first layer and then top with the white chocolate and peppermint. Refrigerator about 45 minutes till hardened.
Remove from refrigerator and break into whatever size pieces you desire.
Place in gift boxes from your local candy store to give as gifts or place into an airtight container to enjoy with your family and friends over Christmas.
