Collage care packages that you can make that are gluten free…

With finals approaching, any parent with a child in college is thinking of ways to help their child survive the dreadful week of finals.
Goody bags are something special anyone looks forward to receiving in the mail and this is something you can send to your child.
As many colleges do these days, they even have options that you can buy and your child will receive it that week of finals.
Unfortunately for me and my son his university doesn’t offer gluten free packages.
So this year I am going to make my own to send him why not right?

What I thought I would start off with is some good coffee
My husband and son drink Jet fuel in the Keurig cups
this little cup really gives you quiet the caffeine punch and I thought it would be good for that late night studying.  Also for those chilly nights some Swiss miss hot cocoa mix with marshmallows.

The next little goodie I thought I’d put in would be some homemade trail mix.
My son loves trail mix to snack on and I love the nutritional value.
That’s a win win in my book… so here goes a recipe

Homemade Trail Mix

What you need

1/2 cup almonds
1/2 cup sunflower seeds
1/2 cup craisins
1/2 cup dried apricots
1/2 cup dried cherries (optional)
1/2 cup white chocolate chips
mix together well and store in a large Ziploc baggie

Another mix I wanted to try was the one on the back of the GF chocolate chex cereal box.
Their Mayan Chocolate Chex Mix.  Tyler likes the mix of heat with chocolate so I thought it would make the perfect snack for him,we’ll see.

What you need is…

3 cups Corn Chex cereal
3 cups chocolate chex cereal
2 cups cinnamon chex cereal
1 cup whole cashews
1/3 cup brown sugar
6 Tablespoons butter
2 Tablespoons light corn syrup
2 teaspoons ground chile pepper
1/4 teaspoon ground red pepper (cayenne)
1 1/2 teaspoon vanilla
1 cup dark chocolate chips
Directions.
In a large microwavable bowl mix cereals and cashews
Then in a smaller 2 cup size microwavable bowl add
brown sugar,butter,corn syrup,chilli and red pepper microwave on high for 1 1/2 minutes stir after 1 minute and until smooth.
Stir in vanilla pour over cereal mixture, stir until evenly coated.
microwave uncovered on high 5-6 minutes stirring every minute
spread on wax or foil to cool.
Break into bite-size pieces mix in chocolate chips and store in air tight container.

And the next thing will be some of these GF chipins.  They come in all flavors. And are very yummy!

Yes these Doritos are know gluten free

gluten free brownie mix

Well final but not least, I’m thinking of some chocolate brownies, I use King Arthur mix.  It’s very good they come out moist and very tasty and he loves these brownies.

Key lime Pie

Or maybe I’ll make a  Key lime pie for him…he loves that as well.  The recipe for this is on the blog.
Time will tell, either way when your children are away from home there are always ways to get them goodies and let them know that you love and are thinking of them whether it be in finals week or just because.
