My youngest loves to help me in the kitchen and she loves to come up with her own creations.
What can I say? Jenna is assertive and when she sees something she wants she goes for it! As was her determination with one of her favorite snacks, rice krispie treats.
We looked for so long to find gluten free rice krispies in the grocery store but each time we checked they would always have malt in the ingredients and we all know gluten free and malt don’t mix.
So it turned into a game almost, every time we went to the store Jenna would go running over to the cereal isle and check, “stupid rice Krispies” was her usual response when they didn’t have gluten free ones. “Mommy, why don’t they have gluten free ones?” “I don’t know honey, one day they will” was my reply.
Well you can imagine the joy that she had when she spotted them on the cereal shelf one day.
She was so excited and grabbed them right off the shelf and said “Mom, now we can make rice krispy treats!” Yes we can! So here you go we have been finding these at most Giant grocery stores.
The recipe calls for:
1/2 stick of butter
1 pkg. 10.5 oz. mini jet puffed marshmallows ( I usually buy two packs and use a little more than what the recipe calls for because we like them extra gooey)
6 1/2 cups of gluten free rice krispie cereal
In a heavy sauce pan melt the butter and add the marshmallows heat till completely melted and all gooey then in a large bowl combine the cereal and butter marshmallow mix together. Then press mixture into a 9 x 13 pan. I use my hands and use a small amount of butter on my hands to help the mixture from sticking.
Oh it is so nice to have these back in the house without paying through the nose and your children can help make them with you, I think we all have those memories!
