Tyler’s Chicken Stir Fry…Mmmmm

When your child moves away it doesn’t matter if they are 45 minutes down the road or 5 hours away, you still miss their voice their laughter and their everyday presence in your home. And of course you miss their great hugs!
 So whenever I get a call or an unexpected text or a visit from my son it just makes my day!  I think I can say, like most of my friends that are in this same circumstance, we love our kids and even the smallest amount of time with them is priceless.
Saying that, I had to share this text from  him that I received the other day.

  Tyler began to tell me that he had made chicken stir fry for supper that night and how good it was.   He loves doing things for his friends and he loves to cook, so that night they all had gluten free chicken stir fry.  He is just that kind of guy, what a blessing!  
Being a mom of a college student, it really just touches my heart to see how he has grown into such a wonderful and caring young man. 
 I am truly so excited to see where the Lord is going to take Ty in his life.
One thing for now is that Ty truly has a passion for cooking…I don’t know about you but for our family we love Chinese food and we really miss going out to a local Chinese restaurant and just ordering off the menu.  In our area we really don’t have a Chinese restaurant that caters to people with gluten allergies.  So most of our dishes are made at home.

So you can imagine how excited I was that he put together this dish and that he was so pleased with the results. I asked him to share it with the blog so we could all enjoy it.
So here is Tyler’s Stir Fry Chicken:

The Sauce
2/3 cup gluten free soy sauce
1/2 cup gluten free chicken broth
1/3 cup rice wine or rice vinegar
3 1/2 Tbsp. sugar
1 Tbsp. sesame oil
1 Tbsp. minced garlic
You will also need
 1 pound of  chicken breast cubed
1 can of chop suey vegetables
 1 red diced bell pepper
1 orange diced bell pepper
1 package of gluten free spaghetti
You can make the sauce ahead of time.
Directions
Add a teaspoon of vegetable oil to a hot pan and add the chicken breast, stir often until it is done.  Remove from pan to an extra plate.
Add the bell peppers, cook till still crispy and then add chop suey vegetables.  Next add the sauce and return the chicken.  Let it simmer for a few minutes mmm..all those flavors coming together.  Last add the cooked spaghetti, give a good mix and Enjoy!
As Ty does have dinner with some great friends 🙂
