|Thin crusted Gluten Free Pizza|
If you ask anyone who is living a gluten free life what food they truly miss most people will tell you Pizza!
It is always in the top contenders. Sure you can buy crust that are OK and they will kinda give you your pizza fix, but for my family well we just miss that New York style pizza, bottom line.
My kids love pizza and I get such joy out of cooking and of course when there is a hard recipe to tackle I enjoy that all the more, would you say I am competitive? I would agree to a point, I am getting better at picking my battles though, with age comes wisdom.
So it has been my personal quest to conquer that pizza recipe and I feel I am closing in on it.
This week I was pretty happy with my results I now have a crust that has a really good flavor and close texture to New York style not the same as we all remember, it is what it is, but it is pretty good if I say so myself. I have been playing with and creating recipes for pizza for sometime and this would be the best so far. And I will tell you it takes hardly any time at all very quick and easy actually faster than take out! Ya who!!
So just for a little bit of info on me, I myself have an allergy to yeast so I have to be careful how much I work with it and also I can’t consume products that have it in only on a very small scale.
When I first became aware of this allergy I couldn’t eat anything with yeast or yeast extract in it without difficulty this was a few years ago.
Since then I have been able to eat a little I’m talking bite size pieces of foods with yeast in. This has only been recently so I choose very carefully, and take baby steps.
For now I rely on my families input and they are very honest no holding punches here and that is what you need when you are playing with a recipe. Pizza is one that I will be doing the happy dance to when I finally get it to the point of what we all remember pre-gluten free days, but until that day comes this is what I will be making.
|This crust has a very good flavor!|
1 Tbsp. of active Yeast
2/3 cup of Luke warm water
1/2 tsp. of honey
1 Tbsp. of olive oil
1 tsp. of apple cider vinegar
1 tsp. of unflavored gelatin
2 Tbsp. powdered milk
2 tsp. of xanthan gum
1 tsp. of Italian seasoning
1/2 tsp. of sea salt
1/2 cup Tapioca Flour
2/3 cup of Brown Rice Flour
Preheat oven to 425F
Mix yeast and lukewarm water let sit for a couple of minutes. Then add honey, olive oil and the rest of ingredients I add the flour last and mix well then press out into a well oiled pizza pan dusted with corn meal. Bake the crust at 425F for 10-15 minutes. Then remove from oven and top with favorite toppings and sauce if you like. Bake for another 15 minutes till cheese is bubbly remove from oven and enjoy!
