Here is the recipe for my Gluten Free Chocolate Banana Cake, I hope you have fun making it and enjoy eating it!
2 cups granulated sugar
1 and 1/4 cup all purpose gluten free flour mix ( I make my own check out that recipe)
3/4 cup sweet white sorghum flour
1 cup black baking cocoa (10%-12% fat content)
2 Tsp. baking soda
1 Tsp. of xanthan gum
1 pinch of cinnamon
1 cup mayonaise
1 tsp. vanilla
3 smashed ripe bananas
2 cups of strong cooled coffee ( I use decaf)
In a large bowl mix all wet ingredients then add to that mix a little at a time the dry ingredients.
Mix till they are well incorporated.
In a greased 9×13 cake pan pour the cake batter and bake at 350 F for 40-45 minutes till center comes out clean with a toothpick.
While cake is still warm I like to top it with some white powdered sugar, it looks so pretty and melts somewhat into the cake, very yummy. The amount to use is up to you it all depends on your personal taste-buds!
If the sugar completely melts and disappears, as it does happen, wait till after the cake has completely cooled then re-top it with the powdered sugar. As always check your ingredients and make sure they are gluten-free.
